Step 01
Combine mixed fruit and orange juice in a saucepan and bring to the boil.
Step 02
Reduce heat to low and simmer for 3 minutes. Remove from heat and rest until completely cool.
Step 03
Preheat oven to 170°C (150°C fan-forced). Line a loaf tin with baking paper and set aside.
Step 04
Sift the self-rasing flour over the soaked fruit and mix well.
Step 05
Pour into loaf tin and bake for 30-40 minutes on the lowest shelf.
Step 06
Remove from oven and leave cake to cool entirely in the tin.
Step 07
Wrap in foil and keep in an airtight container.
