Step 01.
Prepare the Shakshuka Sauce: Heat 1 tbsp olive oil in a small frying pan over medium heat.
Step 02.
Add the diced onion and capsicum and sauté until softened, about 4-5 minutes.
Step 03.
Add the garlic and cook for an additional minute until fragrant.
Step 04.
Stir in the canned tomatoes, ground cumin, smoked paprika, and chilli flakes (if using). Season with salt and pepper. Reduce heat to low and let the sauce simmer for 8-10 minutes, stirring occasionally, until it thickens slightly.
Step 05.
In a separate frying pan, heat a little olive oil over medium heat.
Step 06.
Fry the ham slices until they’re slightly browned and heated through, about 1 minute per side. Set aside.
Step 07.
In the same pan, crack in the eggs and cook to your preference (sunny-side-up or over-easy work well here).
Step 08.
To assemble the muffins: First generously butter the muffin halves and then spread a spoonful of Shakshuka sauce on the bottom half of each toasted English muffin. Place a slice of fried ham on top of the sauce, followed by a fried egg.
Step 09.
Sprinkle crumbled feta over the egg and add a pinch of dukkah for extra flavour.
Step 10.
Garnish with chopped parsley or coriander, then top with the other half of the muffin.
