For the Kimchi Mayo
Mayonnaise2 tbsp
Kimchi, finely chopped1 tbsp
Sriracha1 tsp
Salt and pepper1 pinch
Methods
Step 01.
Prepare the Kimchi Mayo: Mix mayonnaise, chopped kimchi, and sriracha in a bowl. Season with salt and pepper to taste.
Step 02.
Assemble the Sandwich: Spread kimchi mayo on one slice of bread. Layer roast pork, cheese, rocket, pickled cucumber, and avocado. Spread any remaining kimchi mayo on the second slice of bread and place it on top.
Step 03.
Toast the Sandwich: Heat a non-stick frying pan over medium heat with a little butter or oil. Cook the sandwich for 3–4 minutes on each side, or until golden brown and the cheese is melted.
