Frozen berries (from our Berry Go Round pre-mix), thawed 3 cups
Sugar1 cup
Salt1/4 teaspoon
Evaporated milk1 can (12 ounces)
Lime juice2 tablespoons
Rum extract1 teaspoon
Citric acid1/2 teaspoon
Methods
Step 01
Place berries, sugar and salt in a food processor; process until smooth. Press through a fine-mesh strainer into a bowl. Stir the remaining ingredients into a puree.
Step 02
Fill cylinder of ice cream maker no more than two-thirds full; freeze according to the manufacturer’s directions. Transfer sherbet to freezer containers, allowing headspace for expansion. Freeze until firm, 8 hours or overnight
