Step 01.
Heat oil in a large sauté pan and sauté onion and garlic until softened
Step 02.
Add capsicum, chorizo and chicken and sauté until golden.
Step 03.
Add chilli flakes and tomatoes, simmer for 10 minutes until thickened.
Step 04.
Place filling in the centre of each tortilla, folding over the sides. Lay side by side in a roasting dish
Step 05.
Spoon 800g of Dairy Farmers Sour Cream down the centre of the enchiladas and sprinkle with blended cheeses Dairy Farmers Shredded Tasty Cheddar and Dairy Farmers Shredded Mozzarella. Sprinkle with paprika.
Step 06.
Bake at 200°C for 20 minutes until golden.
Step 07.
Combine corn, jalapenos, coriander and lime. Serve sprinkled on top of enchiladas with dollops of remaining sour cream.
