Ingredients

4

boneless, skinless chicken breasts 4
Olive oil 2 tsb
Trumps cumin ground 1 tbs
Trumps Italian Mixed Herbs 1 tbs
Trumps yellow mustard flour 1 tbs
cloves garlic, minced2
Paprika 1 tsp
Salt and pepper, to taste
Lemon wedges, for serving
Fresh parsley or cilantro, for garnish

Methods

Step 01.

Prepare the Spice Mix: In a small bowl, combine the ground cumin, Italian seasoning, yellow mustard flour, minced garlic, paprika (if using), salt, and pepper.

Step 02.

Season the Chicken: Rub the chicken breasts with olive oil. Then, evenly coat them with the spice mixture, pressing it in slightly to help it stick.

Step 03.

Sear the Chicken (Optional): Heat a large ovenproof skillet over medium-high heat. Add a bit more olive oil if needed. Sear the chicken breasts for about 2-3 minutes per side, until they develop a golden-brown crust. This step adds extra flavour but is optional.

Step 04.

Bake the Chicken: If you seared the chicken, transfer the skillet to the preheated oven. If you skipped the searing step, simply place the seasoned chicken breasts on a baking sheet. Bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.

Step 05.

Rest and Serve: Let the chicken rest for a few minutes before slicing. Serve with lemon wedges and garnish with fresh parsley or cilantro if desired.

Serving Suggestions:

  • Serve with a side of roasted vegetables or a fresh salad.
  • Pair with quinoa, rice, or mashed potatoes for a heartier meal.

This recipe combines the earthy flavour of cumin with the aromatic Italian herbs and the tangy kick from the mustard flour, creating a unique and savory dish. Enjoy!
